This sounds like more than an edge tune issue? The way you described the locked in feeling and also the squirrel-iness when running bases flat leads me to believe that the base grind is off. Check with a straight Edge and report back.

Maybe the shop forgot to dull the edges a little at the tip? I’ve always had skis with sharp edges walk around on flat a bit though.

So I did some checking and yep there seems to be part of the base being off and the worst of it around the toe piece of the bindings. Tip and tail contact points were flat but under the bindings different. About the same on each ski.

Tips were good.

Toe piece of binding had a gap of about half a mm or more. The end of the gapping was just after the heel but the toe area had it the worst.
could feel the level wobbling.

Also when I decamber the skis and push in theres a mini gap versus other skis where there isnt. Think this may very well be the problem because past tunes have felt fucking awesome. This one sucks.

Take em to a decent shop for a base grind and base edge bevel reset.

At the shop now. Said it was a tune for spring conditions. Should that really change anything when doing bases? Said the convex was to wick water away but for me the ski just didnt feel right.

My 2c:

Skis should more or less be totally flat, but with beveled edges. I just don't see an overall convex or concave base being beneficial. Nor do I fully understand how you even do that with a belt sander/stone grinder tbh.

If you want less suction on spring slop that should be tuned with a base grind pattern and wax.

Playing around with base and side bevel can be pretty beneficial to getting the feel you're after. Personally I like a 1-1.5deg base and 2deg side bevel, here's a reference to what various brands spec stock: https://www.evo.com/guides/ski-edge-bevel and a great explanation to how to tune these values https://the-raceplace.com/pages/how-to-tune-edges, although for rails you can ignore their warning about detuning edges

TL;DR About edge bevels for those that don't know:
Base bevel dictates how much you need to lean to get the edges to hook up, 0deg is pretty terrifying as the skis are always on edge, 2+ gets pretty loose and drifty feeling.

Side bevel dictates how much the edges bite once leaned over more, 0deg means you keep leaning and the ski is still pretty slidey, 3+ grips hard but can sometimes "lock in" to a carve and trench, making it hard to disengage a carve.

Maybe this can help isolate what you're feeling and why, although my guess is you bases being inconsistently flat is at least part of the problem

yea re-reading this, having flat tips and tails with convex underfoot probably skis like a mess. I would try to re-grind them flat (if you have enough material left)

One of their main techs also said the edge detuning in the tips was uneven. Said originally that the convex helps in spring… then backtracked saying flat bases would work best and that parts of the camber weren't making contact when edge sharpening.

That sucks, sounds like you got a hack job of a tune there. But that now makes more sense with the symptoms you were describing

Homies just covering up for his stoned coworker seriously jacking up your tune. As long as they fix it free of charge and you didn't get hurt I guess be thankful?
