Looking for authentic, homemade recipes to try out. I was a cook for most of covid and finally think I'm decent at it and love making myself real food that is healthy and delicious. What are some of your favorite things to make?
For meals, I'm lazy and make summer pasta. Had veggies in the garden and needed to use them, hasn't failed me yet.
For the ricotta pasta: garlic, onion, ricotta, red pepper flakes, s&p, lemon (just a tad), basil, peas, zucchini.
So basically, cook the pasta (I use the spiral ones??) and muddle olive oil, basil, and salt together. If you don't have anything to do that with just chop the basil up real well. while the pasta is cooking, cook up the onion, and add in sliced zucchini once the onion is clear in the skillet. Make sure you save like a cup of pasta water, strain the rest. add pasta to zucchini & onion, add the basil & olive oil a lil bit of lemon juice, red pepper flakes. add ricotta w/ a bit of the pasta water over medium heat, stir, and ad more of whatever you think is needed. I add the peas at the very end. My bother adds mushrooms and chicken, it's so easy you can do anything with it. Pair with good bread.
Also gumbo!! I love my mom's gumbo. It makes a fuck ton so I usually change the amounts but it's so good!
I won the NV state fair in 2006 for an apple pie, it's very straight forward but I leave absolutely no instructions on it, go for it and see what happens lmao.
It's incredible if you like thai food.. just cut the cucumber in half lengthwise, scoop out the seeds and dry off with paper towels before whittling thin slices with a potato peeler.

Yea I’m legit going to buy these ingredients tomorrow and give this a try
