Replying to Programs to go on exchange

I've been wanting to go on exchange, but I'm not really wanting to go to college currently and so I'm looking for alternative programs, like where you could go apprentice or work for some one to learn an unusual trade or something. I've considered the wwoof programs, but it seems mostly revolve around agriculture or gardening and since I've grown up on a farm I have little desire to go volunteer to weed someones garden or muck sheep crap, whereas learning various forms of carpentry, rock work ect. would be pretty cool.
