I got these new nomad 95s and I want to go -1cm back on them because I have never tried it, both my other pairs are true center. Does this actually change the feel or is it all mental? like if you had a ski the was just +1cm could a expert skier tell from true center without knowing prior?

Nah it don’t matter, if anything it will feel better when skiing down hill, could possibly feel worse on rails, but it’s so little that you won’t notice, do it and forget about it
I'm 1cm back from true center on some Poachers, and I can't tell. Feels very centered, skiing switch feels phenomenal. Great in the park. Highly recommend.
Icelantic's website says recommended mount is 8-9cm behind TC, so 1cm behind TC is already really far forward on those. It's also def worth a shot to hit up a team rider and ask about their setup.
i mount al my park skis at -1 or -1.5 unless its a true symmetrical ski
unless the skis are truly symmetrical (which those aren't i don't think), then -1 is gonna be better than true center! 100% don't sweat it at all

yeah no worries man. the closer you are to the center of the sidecut, the better the ski will turn, but it's nice to move them up a little for rails and balance and switch. a ton of park/freeride skiers basically default to -2 or somewhere in that area
1cm isn’t a huge difference, I have a pair of camoxes at +6.1 which is a noticeable difference but still skiable, plus it depends on how you ski too
Mount at -7 for park skis if you’re a true beast.. all the pros do it
I mount all my symmetrical skis at -.5 and any asymmetrical ski at sidecut center

I traded for another pair and the guy lied about how many mounts, true center was literally the only possible mount, there was chunks missing from the amount of holes drilled
