As a result a spring semester study abroad in Australia I am finding myself with two months off in the winter (End of December to end of February). I would love to be able to do something ski related during this time off, but am having trouble finding any sort of short term employment, which is understandable. Are there any sort of short term ski bum style jobs possible? As another alternative I am a mechanical engineering student and will already have 6 months of engineering work experience at this point but I don't know if ski engineering internships are a possibly. If anybody has any knowledge about this or just skiing related ideas for this time off it would be incredibly helpful.

Just did a quick google search and couldn't find anything. Where did you make contact for the jobs?
It depends what your trying to do. Aspen ski company does a little Xgames job fair about the 2nd Wensday in December in Aspen. For that we usually are hiring snowmobile drivers and fence crew workers. They post a few jobs on the company's job page around the same time.
If your looking for maybe more like espn job stuff keep your eyes on their job page as I don't know when they post Xgames jobs.
