Will these skis be stable enough to support me when skiing fast through crud and tracked out snow. Im about 5 ft 1 in and 105 lbs.
I haven't skied the Rocker2s so I don't know how they perform on crud, but they are definitely long enough for you if that is your concern.
How tall are you and how heavy? If you are actually 5'1 and 100lb they will be way too big for you. How old are you? You may find jnr gear is a better option if those height an weight stats are correct.

I had 155 triple j's last year and I wanted something bigger and this ski was the smallest adult powder ski I could find, and I measured and Im exactly 5 ft 2 in. Im 16 and a strong skier who only skis off piste, would they still be to big.

We'll so long as you are happy to work quite hard on them they will be ok. They will feel pretty big but they do have quite a bit of rocker and the construction used really does help keep the weight an in particular the swing weight down so in that respect they will be good. So long as the jj was not feeling big to you then you should be fine.
