Dude there are adult sessions at many of the camps. COC just has adults around, but when you're down in the village you can just be on your own.
When I used to work at High North, the staff loved Adult week. We'd just party our asses off with the campers, and they all had disposable incomes so would buy us drinks.
So you can feel comfortable that camps are 100% set up to take adults. If you're more there to ski only, then Hood is probably better. If you want to go 50/50 skiing/nightlife then you can't beat Whistler.
