because heath inspectors are in and out of chain restaurants on almost a weekly basis. they're held to a much higher standard and at least in my experience seem to be cleaner than a lot of other places that seem to slide under the radar.

like at the place i work for example, we keep it insanely clean. it's like that because that's the way the head chef John likes it, but it's not because we're constantly worried about Food Safety officials coming around. i haven't seen one of them in Graze's since early August.
