If you're standing straight up and down on top of your skis, your center of balance is going to be under your heels, so if you ski like that, then sure, mount center of forward to center the ski on your balance point.
Nobody skis like that. Your stance puts weight on the balls of your feet, thus, a truly balanced mount would have the center under that part of your foot.
That being said, do whatever you want. Only way to know if you'll like it is to try it.
