im 5'8" ad have 180 ar5, however, i weight a bit more than you. you could probably handle that much ski, it really isnt a huge difference say from the 177 stl or something, but it will probably bit a bit harder.
180 is fine espically center mounted (even though some ppl say it makes no difference it does.) i skid the skogans 178 in the park a few times, and i loved the longer ski... apposed to my 167 chronics.. i am 5'8 n the 178 ski did not seem to big at all, so i'd say def. get them
Sheesh, 180s are not long skis you guys. The problem is everyone is riding such tiny skis these days... (i'm looking in your direction Line...) that they are feeling uncomfortable with anything above 167. Thats TINY for a ski and you will struggle with it anywhere outside the park. My recommendation? Go with a ski that is at least over 175. I am 5'7" and weigh 135 and I ski a 177 Volkl Karma right now, before that I was on a 187 Pocket Rocket which was my favorite ski I had ever owned until they broke.

5 cm doesnt make a damn difference. throughout the year i used 180 ar5s, 176 skogens, 181 mad trix, 165 concepts, my dads 189 something or others and 179 fujatives. i only noticed the difference in length on the concepts
