This easy-to-prepare Burger Burrito is stuffed with a hearty, Beef and Onion filling that tastes great. Wrapped in tortillas and seasoned with Oregano and Garlic—it is sure to be a staple in your dirtbag repertoire.
200g lean ground Beef.
2 large Tomatoes, thinly sliced.
1 tsp oregano.
1 garlic clove.
Â½ white onion.
1 Avocado, pitted and thinly sliced.
2 tortilla wraps.
2 tbsp extra virgin Olive Oil.
Sea Salt and Black Pepper to taste.
In a frying pan, heat the Olive Oil over a medium heat. Saute the Onion, then add the sliced Garlic. As the Garlic starts to brown, add the ground Beef and increase the heat—stirring occasionally. Season with Oregano, Salt, and Pepper—stir in and cook for a further 5 minutes.
Remove from the heat and transfer onto a plate lined with paper towels to absorb any excess Oil. Lay the Tortilla, flat on a large cutting board or clean surface and add roughly ½ of the Beef into the centre of the wrap, spreading it horizontally to each side, and leaving about an inch border. Layer the Tomatoes and Avocado over the meat.
Fold one side of the tortilla. Brush with the egg wash, then fold the other side over and press down firmly. Repeat with the other two opposite sides—you should have a tightly packed Burrito. Repeat with the remaining tortilla.
Return the frying pan to the stovetop and heat the remaining tablespoon of Olive Oil on a medium heat for 2 minutes. Add the Burritos to the frying pan and cook for 3 minutes per side or until lightly browned and crispy. Serve immediately.
