Mounting pivots on my own?? is this plausible? if so how hard?

yes you can do it but you need the knowledge and tools

Drill bit (3.6mm) if im correct the kartel shouldnt have any metal in it
posidriv #3 screwdriver
marine epoxy/waterproof wood glue
ideally a torque wrench
measuring device: tape measure, ruler, caliper
mounting template

theres plenty of vids out there on how to mount em up once you have the stuff

If you plan on mounting your skis from now on, i would invest in the tools. but if its just to slap the pivots on quick, i would bite the bullet and go into the shop and even see if they can work you a deal

so you can afford pivots and ON3Ps but not $60 to have them mounted? i wouldn't wanna risk messing up my stuff. At least if shop messes up they are liable

then to revise my answer, yes go for it haha

Get the print out templates on TGR forums, make sure the scale is correct. If you have no experience with using these hand tools/ carpentry or whatever this could be a great learning experience. I recommend practicing on an old pair of skis or even a 2x4 to get the hang of it and build confidence. Worth a shot, I mount all my shit at home and it’s enjoyable to crush some beers and drill some skis.
