The scale does make it difficult to gauge how big the gap is, it might be worth taking the the skis in or take it again with a ruler beside to show the gap.
If they won't fix them still ask them whether they used glue when mounting, if they didn't, you might be able to back the screws out, put epoxy in them and carefully screw them back down without stripping the thread in the hole. If they're glued you might have to get them helicoiled, but I'd take them to a different shop if they won't fix them.
Your attitude when you go in is important. Not that I'm saying you did this but, going in ranting and raving at the guy won't help. Being as calm and as understanding of their position as you can will help. There is a real risk that if they get iced up, putting stress on the screws, you could tear out the toe and possibly injur yourself. This isn't a correct mount and is easily avoided with a bit of care.
