Center mount is just perfect because you get the same amount of space on the back as a the front.
It doesn't matter if the ski isn't symmetrical, that just changes how the width of the tail and nose are different.

californiagrownIt opens at all values performance of the ski out side of just rails, and small features, then I would highly suggest that you keep the mount right around recommended.

californiagrownIf you don't carve while skiing switch, then sure, mount em center. If you do carve while skiing switch, mounting center on a non symmetrical ski will inhibit how the skis ride switch. Again, you want the sidecut center under your midsole.
