I don't think I'd ever order fish at a restaurant either (at least where I am, fish + chips being an exception).
But when I'm cooking myself (which is pretty much always), saltwater I enjoy a quicker cook to sear the outside and get a nice crispy skin but have the meat range from opaque under the skin to a slightly translucent interior. freshwater I like to cook on lower heat so it's almost completely opaque evenly all the way through then move to higher heat to crisp up the outside and once it's on your plate it will be entirely opaque all the way through.
But I'm pretty picky about getting fish cooked just perfectly if it's on its own and not in a sauce.
