if you do it yes, and if you move them to a different position then yes slightly

if the shop plugs the holes well, it should do too much damage

I got my skis remounted, and moved the bindings 8cm. I can't really tell the difference. The old way I had them maybe the skis were little more stiffer, but not much. I wouldn't worry about it really, one remount is okay.
