select the part you want with the magnetic wand or all of it. Then go to i think image, adjustments, black and white mode (BW) Im not sure about the names, then if you want to colorize it, after turn it back to RGB

or just select the part you want, select a gray color, select the brush tool, then up top in the tool menu switch normal to color and paint over the part.

if you want to make the whole layer black and white go to the options on the layer palette and desaturate

easiest way to make it black and white is make a new layer, fill it all with black (or white), then change its layer blending style (drop down box beside opacity) to colour

new adjustment layer>channel mixer
hook off monochrome and put the red chanel to 60 and the green to 40.
gives you a nice contrasty bw

or i think you can go to color balance or one of the things next to it and turn the saturation way way down
