I've seen a few do it, and come out pretty well and i think i would want to do the same.

I would paint all black, with Wu-Tang symbols and write Wu-Tang

So. What paint would i use, advantage/disadvantages, an tips, thoughts in general?

plasti dip FTW! its a black plastic like spray that wont chip as easily as paint. its in the spray paint section.

Don't listen to the other guys.
It's fairly simple - you should use sand paper to make the top sheets able to hold paint , then spray paint(many coatings) and then add a clear coating. And then the most important part - take pics and show it to us (i'm sure the wu-tang theme will look awesome on your skis).

Skis... risky. I painted my bindings because they were black and it not practical to grab with black bindings IMO so I painted them flash yellow. But last december I bought Yellow flashy bindings.
