Skinny Ski vs Fat Ski
I see all of these people using pow skis that are 120mm underfoot, does this help with balance or is it just personal preference.

mainly preference. as ski tech has evolved people can ski wider skis in more diverse conditions.

Mostly preference. As a general assumption (though not true all the time) a skinnier ski will turn in a smaller radius since generally they have a larger sidecut. Also on a skinny ski the transfer time from edge to edge will be less when carving
