Utah pretty much only has super mellow smooth stuff that is fine on a 160mm or 180mm bike, then a handful of gnarly dh trails that are hard to find and require a legit dh bike. So if you don't plan on getting into those I'd go for a smaller single crown for sure, a demo 7 would probably be the perfect do it all gravity bike for Utah. And like Kyle said, for the dorms get a granny gear up front for sure so you can fuck around in the foothills and ride up to bobsled easy.
If you do want a legit dh trails you can buy my demo 8 though :) It's definitely overkill at canyons, but at 38 lbs it's plenty light still and jumps awesome.
