Anyone smoke their own meat?

I've been getting quite heavily into cooking recently, and I'm always on the look out for ways to make better tasting food.

Anyway, I saw a programme about a guy who smokes his own meat and fish, and it looked amazing. He was producing the most delicate smoked beef, deer, chicken and fish, and smokey BBQ sauces, etc.

It looks too good to pass up on

So my question is NS, has anyone attempted this? What was the result like, and what is the best way to make the smoke (woods and methods)?

My boss smokes meat with apple wood. Says the apple taste gets into the meat and its great. Give it a try

my buddy and i smoke venison when we are lucky enough to get a deer. other than that, i really havent tried anything else

I like to take the tail from a fillet of whatever fish, make a simple teriyaki marinade with rice wine vinegar, sesame oil, fresh grated ginger, soy sauce and honey. Marinating the fish for about 6 hours. Then putting it over indirect heat on a grill with cedar chips directly over the heat. It's as close to smoking fish as I get without a smoker.

I like to smoke and make pulled pork and ribs. It's so easy and it taste amazing. If you are getting into this type of cooking, it's also fun to make your own BBQ rub or your own BBQ sauce. I make some with wine and another with DR.Pepper, soooo good. But back to smoking. Go out to your local store and buy one for like $250 to start off with, or whatever the price. Then just try different things. I like to try new things and not pay attention to what otheres do.

my dad bought a smoker a few years ago and we just try different types of wood combinations and just let it smoke for like 10 hours. thing works so good. i wish i could use it at my apartment haha.

You know, you just bend over, drop your meat, tenderize it a bit - but be careful so it doesn't get too hard, that could cause problems. I usually just like to whip it right in there without any extra efforts: what you see is what you get and it also applies to meat, so it's better to just work with what you got and not go for anything that's just too much to handle.

Im into barbecuing, made my own smoker last spring. competed in the canadian national barbecue championships in whistler this summer, So much fun
I like all the disciplines in competition- chicken, ribs, pork shoulder, and beef brisket. Ill spend a day practicing anytime, its a good way to have a party and drink lots of beer
i like smoking with hickory, apple, and mesquite
watch bbq pitmasters on TLC, its a good motivator to get into it
