To be honest, you probably wont notice a lot of difference, unless you've been riding skis that are mounted real far back (-5 etc).
My theory is that when you buy a ski you've never ridden before, it's the differences in the dimensions/flex that you notice most, not a couple of cm difference in binding position.
As I said above, your Cryptonites will slay groomers regardless where you mount them.
The reasoning behind mounting further back is quite hard to explain. I spent the last 20 minutes trying, but it didnt sound right. There's a lot of physics involved. But look at race skis and see how far back bindings are. There is a lot more ski in front than behind and because race skis primary objective is to rip the shit out of groomers.
If you want to know what it feels like to mount centre, go demo some skis.
